Chimichurri Chicken Skewers

  • Ingredients:

    1. 2 chicken breasts, cut into bite-sized cubes

    2. 1/4 cup olive oil

    3. 2 tbsp lemon juice

    4. 1/4 cup Chimichurri sauce

    5. 1 tbsp garlic powder

    6. Salt and pepper

    7. Wooden skewers (soaked in water for 30 minutes)

  • Instructions:

    1. In a bowl, combine the olive oil, lemon juice, Chimichurri sauce, garlic powder, salt, and pepper.

    2. Add the chicken cubes to the marinade and mix well. Marinate for at least 30 minutes (up to overnight).

    3. Thread the chicken cubes onto the skewers.

    4. Preheat your grill or grill pan to medium-high heat. Grill the chicken skewers for about 4-5 minutes per side until fully cooked.

    5. Serve with extra Chimichurri sauce for dipping.
