Chimichurri & Feta Cheese Lamb Chops

  • Ingredients:

    1. 4 lamb chops, bone-in

    2. 1/4 cup Chimichurri sauce (plus extra for serving)

    3. 1/4 cup crumbled feta cheese

    4. Fresh mint leaves, chopped

    5. Olive oil for searing

    6. Salt and pepper

  • Instructions:

    1. Season the lamb chops with salt and pepper. Let them rest at room temperature for 10 minutes.

    2. Heat olive oil in a skillet over medium-high heat. Sear the lamb chops for 3-4 minutes per side, or until browned and cooked to your desired doneness.

    3. Remove from the heat and let the chops rest for 5 minutes.

    4. Drizzle the Chimichurri sauce over the lamb chops and sprinkle with crumbled feta cheese and fresh mint.

    5. Serve immediately with additional Chimichurri sauce on the side.
