Chimichurri & Feta Cheese Lamb Chops

Ingredients:

4 lamb chops, bone-in

1/4 cup Chimichurri sauce (plus extra for serving)

1/4 cup crumbled feta cheese

Fresh mint leaves, chopped

Olive oil for searing

Salt and pepper

Instructions:

Season the lamb chops with salt and pepper. Let them rest at room temperature for 10 minutes.

Heat olive oil in a skillet over medium-high heat. Sear the lamb chops for 3-4 minutes per side, or until browned and cooked to your desired doneness.

Remove from the heat and let the chops rest for 5 minutes.

Drizzle the Chimichurri sauce over the lamb chops and sprinkle with crumbled feta cheese and fresh mint.

Serve immediately with additional Chimichurri sauce on the side.
