Chimichurri & Manchego Stuffed Mushrooms

  • Ingredients:

    1. 12 large white mushrooms, stems removed

    2. 1/2 cup Manchego cheese, grated

    3. 1/4 cup breadcrumbs

    4. 1/4 cup Chimichurri sauce

    5. 1/4 cup cream cheese, softened

    6. 2 tbsp parsley, finely chopped

    7. Salt and pepper

  • Instructions:

    1. Preheat your oven to 375°F (190°C).

    2. In a bowl, combine the grated Manchego cheese, cream cheese, breadcrumbs, 2 tbsp of Chimichurri sauce, and parsley. Season with salt and pepper to taste.

    3. Stuff the mushroom caps with the cheese mixture, pressing gently to pack it in.

    4. Arrange the stuffed mushrooms on a baking sheet and bake for 15-20 minutes until golden and bubbly.

    5. Drizzle the remaining Chimichurri sauce over the top just before serving.
