Chimichurri & Ricotta Stuffed Chicken Breast

  • Ingredients:

    1. 4 boneless, skinless chicken breasts

    2. 1/2 cup ricotta cheese

    3. 1/4 cup Chimichurri sauce

    4. 1/4 cup Parmesan cheese, grated

    5. 2 tbsp fresh basil, chopped

    6. Salt and pepper

    7. Olive oil for searing

  • Instructions:

    1. Preheat your oven to 375°F (190°C).

    2. In a bowl, combine the ricotta cheese, Chimichurri sauce, Parmesan, and basil. Season with salt and pepper.

    3. Carefully cut a pocket into each chicken breast and stuff with the ricotta mixture.

    4. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the chicken breasts for 2-3 minutes per side until golden brown.

    5. Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).

    6. Serve with an extra spoonful of Chimichurri sauce and enjoy!
