Chimichurri & Ricotta Stuffed Chicken Breast

Ingredients:

4 boneless, skinless chicken breasts

1/2 cup ricotta cheese

1/4 cup Chimichurri sauce

1/4 cup Parmesan cheese, grated

2 tbsp fresh basil, chopped

Salt and pepper

Olive oil for searing

Instructions:

Preheat your oven to 375°F (190°C).

In a bowl, combine the ricotta cheese, Chimichurri sauce, Parmesan, and basil. Season with salt and pepper.

Carefully cut a pocket into each chicken breast and stuff with the ricotta mixture.

Heat olive oil in an oven-safe skillet over medium-high heat. Sear the chicken breasts for 2-3 minutes per side until golden brown.

Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).

Serve with an extra spoonful of Chimichurri sauce and enjoy!
