Ingredients:

1 zucchini, sliced

1 red bell pepper, chopped

1 sweet potato, diced

1 red onion, sliced

2 tbsp olive oil

Salt and pepper

1/4 cup Chimichurri sauce

Instructions:

Preheat your oven to 400°F (200°C).

Toss the vegetables with olive oil, salt, and pepper, then spread them out on a baking sheet.

Roast for 20-25 minutes, or until the vegetables are tender and lightly browned.
