Chimichurri Shrimp Tacos

  • Ingredients:

    1. 1 lb shrimp, peeled and deveined

    2. 1 tbsp olive oil

    3. 1 tsp smoked paprika

    4. 1/2 tsp garlic powder

    5. Salt and pepper

    6. 1/4 cup Chimichurri sauce

    7. 8 small corn tortillas

    8. Shredded cabbage and avocado for topping

  • Instructions:

    1. In a bowl, toss the shrimp with olive oil, smoked paprika, garlic powder, salt, and pepper.

    2. Heat a grill pan or skillet over medium-high heat. Cook the shrimp for 2-3 minutes per side until pink and opaque.

    3. Warm the tortillas on the grill or in a dry pan.

    4. To assemble, place the shrimp on the tortillas, top with shredded cabbage, avocado, and a generous drizzle of Chimichurri sauce.
