Chimichurri Shrimp Tacos

Ingredients:

1 lb shrimp, peeled and deveined

1 tbsp olive oil

1 tsp smoked paprika

1/2 tsp garlic powder

Salt and pepper

1/4 cup Chimichurri sauce

8 small corn tortillas

Shredded cabbage and avocado for topping

Instructions:

In a bowl, toss the shrimp with olive oil, smoked paprika, garlic powder, salt, and pepper.

Heat a grill pan or skillet over medium-high heat. Cook the shrimp for 2-3 minutes per side until pink and opaque.

Warm the tortillas on the grill or in a dry pan.

To assemble, place the shrimp on the tortillas, top with shredded cabbage, avocado, and a generous drizzle of Chimichurri sauce.
