Chimichurri Steak Salad

  • Ingredients:

    1. 2 sirloin steaks (or your preferred cut)

    2. Salt and pepper

    3. 4 cups mixed salad greens

    4. 1/2 cucumber, thinly sliced

    5. 1/2 red onion, thinly sliced

    6. 1/4 cup cherry tomatoes, halved

    7. 2 tbsp olive oil (for grilling)

    8. 1/4 cup Chimichurri sauce

  • Instructions:

    1. Season the steaks with salt and pepper. Heat olive oil in a grill pan or skillet over medium-high heat.

    2. Cook the steaks for 3-4 minutes per side, depending on thickness and desired doneness. Let the steaks rest for 5 minutes before slicing.

    3. In a large bowl, combine the mixed greens, cucumber, red onion, and tomatoes.

    4. Slice the steak thinly and arrange it on top of the salad.

    5. Drizzle with Chimichurri sauce and serve immediately.
