Chimichurri Steak Salad

Ingredients:

2 sirloin steaks (or your preferred cut)

Salt and pepper

4 cups mixed salad greens

1/2 cucumber, thinly sliced

1/2 red onion, thinly sliced

1/4 cup cherry tomatoes, halved

2 tbsp olive oil (for grilling)

1/4 cup Chimichurri sauce

Instructions:

Season the steaks with salt and pepper. Heat olive oil in a grill pan or skillet over medium-high heat.

Cook the steaks for 3-4 minutes per side, depending on thickness and desired doneness. Let the steaks rest for 5 minutes before slicing.

In a large bowl, combine the mixed greens, cucumber, red onion, and tomatoes.

Slice the steak thinly and arrange it on top of the salad.

Drizzle with Chimichurri sauce and serve immediately.
